Summary

This interview presents an overview of CropCat (Upscaling Minor Crops with Institutional Catering), a research project funded under the first co-funded call of the European AGROECOLOGY Partnership. In the interview, the project coordinator discusses the project's objectives, approach, participating partners and expected contributions to agroecological transitions in Europe. Particular attention is given to the role of crop diversification, Living Labs and institutional catering in creating new opportunities for minor crops and strengthening sustainable food systems.

The interview explains how CropCat addresses barriers to the wider adoption of minor crops through collaboration among farmers, processors, caterers, consumers, researchers and policy makers. It also highlights the project's expected outcomes, including innovations in crop production, value-chain development, consumer engagement and policy support for agroecological transformation.
